Made some yummy pancakes this morning! Tweaked a recipe I found online at

My version:
Mashed Banana Pancakes
Ingredients:
- 2 cup of flour
- 2 tbsp sugar
- 4 tsp baking powder
- 1 tsp salt
- pinch of cinnamon and nutmeg
- 2 large eggs
- 2 cups milk
- 4 tbsp softened butter
- 2-3 medium sized ripe bananas, mashed
- 2 tsp vanilla
Directions:
- Mix the flour, sugar, baking powder, salt, cinnamon and nutmeg together into a large mixing bowl.
- In a separate bowl, mix egg, milk and butter, vanilla and bananas.
- Gradually, add the wet ingredients into the dry ingredients mixing well (batter will be lumpy).
- Heat a pan to medium high heat, drop about ¼ cup batter per pancake onto pan, cooking until golden on both sides.
- Serve with whipped cream…or maple syrup. YUM!
