Made some yummy pancakes this morning! Tweaked a recipe I found online at

My version:
Mashed Banana Pancakes
Ingredients:
  • 2 cup of flour
  • 2 tbsp sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • pinch of cinnamon and nutmeg
  • 2 large eggs
  • 2 cups milk
  • 4 tbsp softened butter
  • 2-3 medium sized ripe bananas, mashed
  • 2 tsp vanilla
Directions:
  1. Mix the flour, sugar, baking powder, salt, cinnamon and nutmeg together into a large mixing bowl.
  2. In a separate bowl, mix egg, milk and butter, vanilla and bananas.
  3. Gradually, add the wet ingredients into the dry ingredients mixing well (batter will be lumpy).
  4. Heat a pan to medium high heat, drop about ¼ cup batter per pancake onto pan, cooking until golden on both sides.
  5. Serve with whipped cream…or maple syrup. YUM!

Changes

So it's starting to hit me that my baby is about to be a senior in high school. I had someone tell me once that I didn't have the right to be upset when my son left for college (my second to go) because I had done it once and I still had one at home. That was a very hurtful statement. None of my children (I have three) can replace the other. In fact, I have found it harder with each child leaving the nest. This last one is the hardest, not the easiest (contrary to what the above mentioned person thought). I  plan to treasure every moment of her last year of high school, the good and the bad. I know that this year will fly by and before I know it we will be packing her off for college. With that said, this year also brings a wedding. My oldest daughter will be marrying her Prince Charming in December. This young man has been like a son to me for many years. This will make it official. A season of changes and blessings ahead!!

Apple Mint

I've thought about doing the 365 Photo Project for some time. However, I'm not sure I would keep up with it on a daily basis, so here I am...

I have sadly not inherited the family green thumb. I cannot grow anything. I even all but killed my first attempt at a mint plant. That's a weed!! (still trying to love it back to life) I've decided to give it another try. I planted an Apple Mint today. I will post pictures periodically of it's progress (see the first pics below)...hopefully there will be progress. Wish me luck! And any constructive hints are welcome!
